Cut the dragon fruit in half and scrape out the fruit.
Combine coconut milk, egg yolks, vanilla, honey and sea salt in a sauce pan over medium heat. Bring to a boil while constantly whisking. Remove from heat and let cool.
Place dragon fruit in blender or food processor and process down.
Add dragon fruit mixture to cooled coconut milk mixture.
Place in refrigerator to cool at least 2 hours, but can be overnight.
Remove from refrigerator and churn immediately in ice cream maker using the manufacturer instructions.
